Canning salmon is a great way to free up freezer space. Just be sure to thaw your salmon before canning. Canned salmon has so many uses: salmon loaf, salmon patties, salmon pasta toss, salmon chowder, salmon spread, smoked salmon eggs Benedict, salmon and egg hash, salmon stuffed potatoes, salmon BLT, salmon salad sandwiches, and more. The Ball Blue Book tells you to soak salmon pieces in a brine of 1 C canning salt to 1 gallon of water for one hour and then drain for 10 min. I have never done this. The <a href="http://nchfp.uga.edu/how/can_05/fish.html">National Center for Home Food Preservation</a> doesn't have you do this. It is an unnecessary step and I just add salt to the jar before capping.<br />
<br />
<b>My method is simple:</b> Cut salmon in pieces to fit your pint or half pint jars and pack into strelized jars with skin next to glass. Fill gaps with smaller pieces of salmon. Leave 1 inch head space. Add 1 tsp canning salt per pint, or 1/2 tsp per half pint. DO NOT add liquid. Adjust simmered lids and rings. Process in a pressure canner for 1 hour and 40 minutes at 10 pounds pressure, or adjust for altitude like I need to where I live. Follow your canners directions returning pressure to zero before removing from canner. <br />
<br />
<b>Canning Smoked Salmon</b>- Lightly smoke the fish with only 1-2 panfuls of wood chips before canning. I cannot stress this enough. You won't get a stronger smoke flavor by smoking longer, you will only end up with salmon chips. Hard, dark pieces of salmon that are more like jerky to be gnawed on by your dutiful spouse who insists they are delicious. Yes, I'm speaking from experience. So, lightly smoke your fish according to your favorite recipe and follow canning instructions above, EXCEPT, OMIT SALT. Remember, you salted your fish in a brine prior to canning and you don't want salted, smoked salmon. The salmon will finish cooking in the canner. It won't be mushy and will be a sought after commodity. Trust me. It is delicious and I use in in salmon spreads, by itself on crackers, or straight from the jar.<br />
<br />
<b>Favorite Recipe</b> for canned salmon:<br />
<br />
<u><b>Pasta Salmon Toss</b></u><br />
<br />
2-3 hard boiled eggs, chopped<br />
1 clove garlic, minced<br />
1 pint salmon, regular or smoked<br />
salt and pepper to taste<br />
1/2-3/4 pounds spaghetti, cooked al dente, reserve 2-3 TB cooking water<br />
3-4 TB olive oil<br />
3-4 TB butter, room temp.<br />
1 TB dried parsley<br />
1-2 TB lemon juice<br />
1-2 TB capers<br />
<br />
While spaghetti is cooking, drain and flake salmon, removing skin. Stir in garlic, eggs, olive oil, butter, parsley lemon juice and capers. Toss in cooked spaghetti and fold together. Add capers and a Tb or more of cooking water if it seems dry. Add salt and pepper to taste and serve. This is a frequent request when our daughters visit us.<br />

<b>Canning Tuna</b><br />
<br />
We are fortunate enough to have access to the Pacific NW waters and fresh albacore tuna. If you are ever able to buy tuna straight from the docks (or charter a guide to go fishing), you're in for a treat. There is nothing like fresh tuna and if you ever can your own albacore tuna, you will NEVER want store bought canned tuna again. The dock hands will clean and quarter the tuna you choose and you just keep it on ice until you are ready to use it. Follow the directions for canning at the <a href="http://nchfp.uga.edu/how/can_05/tuna.html">National Center for Home Food Preservation </a>can your tuna. Cut out the dark flesh and Quarter. Cut quarters crosswise into lengths
suitable for half-pint or pint jars. Fill into jars, pressing down gently to make a solid pack. I don't add liquid to my tuna, but it may
be packed in water or oil, whichever is preferred. Add water or oil to jars, leaving 1-inch
headspace. Add 1/2 teaspoon of salt per half-pint or 1 teaspoon of salt per pint, if desired. Process according to your canners directions for time ( 100 minutes) and altitude.<br />

If you can't get fresh tuna, you can order canned tuna from <a href="https://cannedalbacoretuna.com/">The Seafood Connection</a><b> </b>in Westport, WA. Their canned tuna is awesome and they even have smoked canned tuna. We have tried both and love it. We order their tuna when we run out of our home canned. It is so much better and superior, and you get a solid piece of tuna that fills the whole can.<br />

<u><b>Creamed Tuna</b></u><br />
<br />
Make a white sauce by making a roux with appx. 1/3 C butter and 1/3 C flour and heat while it bubbles stirring frequently with a whisk, for 1-2 min. Add milk while stirring to make a medium thick sauce. Add 1-7 oz can tuna, stirring to break up pieces. Add salt and pepper to taste. Serve over mashed potatoes with a side of peas or green beans.<br />

I had a King salmon fillet in the freezer from 2015 and since it was from the Columbia River in Washington, I knew it was heading up to spawn, so not as fresh eating as ocean salmon. We prefer eating Reds (Sockeye) or Silvers (Coho). Salmon that are starting to turn because they are getting ready to spawn, aren't as palatable. They are better for smoking, or in this case, my first attempt at pickling.<br />

The salmon season is so finicky on the Columbia River. Last year, sockeye were stacked up at the mouth of the Okanogan due to high water temperatures to head up to Canada to spawn, and it was a fishers paradise. This year, cooler water meant sockeye weren't hanging around and headed straight up river. We spent 2 hard weekends fishing for sockeye this summer up there. One Sunday after fishing our tails off all day Saturday, and then again on Sunday, we managed to land 2 fish. When we got back to the dock, the Fish and Wildlife gal came over to our boat and asked if this was the boat with all the fish. I told her we only caught 2. She said, well if this was a tournament, you're in first place! We call them our $500 sockeye! We spent at least that much to have them in our freezer!<br />
<br />
I adapted <a href="https://sandrarecipeblogsite.blogspot.com/2010/04/alaska-pickled-king-salmon.html">Sandra's recipe</a> for pickled salmon, basically using 2 C water, 1 C vinegar and 2 TB of pickling spices, then adjusted the sugar by one fourth. I guesstimated on the amount of salt and sugar to use for curing, making sure the salmon was well covered. Otherwise, it would result in mushy salmon. I'm going to go try a piece now, even though it has been only one day. Be back in a minute.<br />

Wow! This is amazing. It is not too vinegary, which I thought it would be trying it so soon. It is pleasantly but mildly sweet, tangy, firm, and just the right amount of seasoning. I bet it will be better in a few weeks!<br />
<br />
Today, my endeavor was making applesauce from our Jonagolds which produce every other year. I ended up with 7 qts. and 4 pints. I still have some apples left and am thinking about making a batch of apple butter.<br />

You know things are going really well because times have been a struggle before. What a long 12 months we have had.<br />
<br />
Bright spots (thanks) - faith in God, we both have good jobs, thus income, little consumer debt (car & camper), plenty to eat, house, clothes, healthy adult children making good choices, each other, like minded, and we cherish each other.<br />
<br />
Difficult spots (frustrations) - DH in pain for weeks last summer = surgery for kidney stone and 2 month recovery, followed by 3 weeks of intense tooth pain, followed by tooth being pulled, puppy was ran over and had to be put down, I had a cough for weeks and then prescribed round after round of antibiotics for "sinus infection"- ended up in hospital with C Diff and am still trying to recover, paying $400+/mo. in medical bills, very difficult time at work with lots of stress for both of us, oldest dog died, letter from IRS stating we owe $14,000 for tax year 2014, said we filed an EZ with only my incorrect income showing with a big refund. We are now finding out our identity was most likely stolen and get to meet with IRS on Friday to get straightened out. Fished hard for 2 weekends straight for long hours, only to have 4 fish to show for it. DH having more health issues - prescribed double antibiotic for 30 days (still taking it). These are the highlights. Plus trivial things like the lawn mower won't start, no like minded friends, pick up needs a lot of work, can't keep up with chores, etc.<br />
<br />
So, between all the medical and health issues, losing 2 dogs, the IRS, work stress, medical bills, and the like, we still have a pretty good life and can't complain. We have had a long storm. I could not go through all of this without my DH and faith. I start my new job in 2 weeks. I hope it will be a good year, and that my DH will stay busy with work. I am very blessed. Not so anymore. I can spend $100 and get home and wonder what we are going to eat for the next week. Have you noticed the price of meat? Especially the "cheap" cuts? $4.99 and up for hamburger or chuck roast? Forget about buying fresh produce in winter or summer for that manner. The prices are about the same. And considering that most of our grocery story food is shipped from <a href="https://www.thrivelife.com/files/materials/Flyer-Fresher-than-Fresh.pdf">great distances </a> to our stores, they contain very little nutrition, as well as GMO's. Well, I have some very delicious and inexpensive meals that your family will love and will stretch that food budget.<br />

1 beef bouillon cube, dissolved in 1 cup hot water<br />
2 cups cooked rice</span>

Heat and simmer a few minutes. Place in a greased casserole and bake 45

1/2 tsp oregano </div>

Wash lentils and place them in the pot with 2 qts. water, and the rest of the ingredients except the tomatoes and vinegar. Cover and simmer for 1 & 1/2 hours. Add tomatoes breaking up if whole, add vinegar and simmer 30 min. longer. Taste and add more salt and pepper if needed. If you prefer thinner soup, as I do, add up to another Qt. of water. </div>

½ <span style="mso-spacerun: yes;"> </span>C water (add a pat of butter to the
water) for about 18 min. or until water is absorbed. I like to keep the rice on
the drier side since it will absorb some of the liquid while cooking in the
oven. Meanwhile, place shrimp in a large (2 qt.) casserole dish and stir in
lemon juice and oil and allow to rest for 10 min. Add the rest of the
ingredients, along with the cooked rice, starting with about ¾ cup of the half
and half. We like our casserole a little drier, so I use the lesser amount. If
you want it a little soupier, use more of the half and half. I have used milk
instead of half and half and it is just not the same. The original recipe calls
for heavy cream, but we like it with half and half. I like to top off the
casserole with a sprinkling of almonds and a dash or two of paprika before
putting it in the oven. Bake for 50-55 min. This freezes very well and is
easily doubled. With a salad and hot rolls or garlic bread, this makes a hearty
meal. </span></div>

paprika, if desired. Drizzle melted butter of chicken. Add Cream of Chicken soup, cubed cream cheese, 1/4 C chicken broth or water, Ranch Dressing Mix, and gently fold to combine. Cook on low for 4-6 hours. Stir to blend ingredients. Serve over warm buttered noodles. Top with c<span style="font-family: "times new roman" , "serif";">rumbled bacon, if desired. </span>This recipe easily doubles and freezes well.</span><br />

1/8 tsp pepper<br />

1/2 C dried or freeze dried mushrooms<br />

1 C freeze dried hamburger (or if making fresh-1/2 pint canned burger, or 1/2 lb. hamburger, cooked)<br />
1 1/3 C macaroni<br />

To make jar meal: add macaroni to jar, layer ground beef on top, then add mushroom and seasoning baggie.<br />

To make: soak mushrooms in hot water, cook macaroni and drain. Drain mushrooms, saving water and add enough water to equal 1 C. Put water and sauce mix in pot, simmer until thick, add water if too thick. Add meat, mushrooms and cooked macaroni, heat through. Garnish with parsley.<br />

Our beloved 11 month old Golden retriever, Ernie, was backed over by a semi. He was able to drag himself with his front legs out from under the front tire. I rushed him to the vet and xrays showed he had a broken pelvis, broken rear leg, and a broken or cracked sacrum. Our vet gave us hope if we took him to Washington State University Veterinary School where a team of orthopedic experts could mend him back together. The next day we had a very long drive to get there. Unfortunately, Ernie had more than just broken bones. He was not putting any weight on his good rear leg, and was not responding favorably to various pain tests. In other words, he had nerve damage. We made the painful decision to put him down. We brought him home and buried him on our property next to another Golden we had, Jake. Jake died at age 8 from bone cancer. We got Cooper about 2 weeks before Jake died.<br />
<br />
Cooper knew immediately when we brought him home as he sniffed with great care at the box that Ernie was in. Cooper barely ate for 2 weeks and had little energy. Bubbles, our 16 year old cat, cried out mournfully with long, agonizing yowls. Ernie used to play ball with her. He would drop the tennis ball in front of her as she lay or sat, and she would bat the ball away with her paw. He would jump to get it and bring it back to her to drop in front of her again, which she would then swat with her paw, and this would repeat over and over again. It was comical to watch.<br />

I first came upon this idea from my Women's Day Cookbook. Over the years our family has some definite favorites and I have tweaked them to make them my own. Now that my daughters are out of the house and in college, I will be portioning these meals for the 2 of us. I now have in the freezer, 2 lasagnes, 3 meatloaves, 8 dinners of salisbury steak for 2 with gravy, spaghetti sauce, and 4 meals of chili. Just thaw and reheat. What could be simpler? One bonus is that every recipe incorporates vegetables. You will need 11 pounds of ground beef for this. <br />

I started out by chopping up in my food processor (fairly small, some pieces are tiny bits) 2 pounds each of onions, carrots, and zucchini. I cooked these in 1/4 C of oil for about 15 min.These cooked vegetables will be used in every recipe.<br />

In another pot, I then made a plain meat sauce with 3 pounds ground beef ( I used 90% lean Angus because it was on sale), 1 Tb garlic and some salt and pepper. I browned this up and then added 6 C. of the cooked vegetables, 4- 28 oz. cans of tomato sauce (you could use crushed), 1- 15 oz can of tomato sauce and some salt. I brought it to a boil and simmered on low for about 20 min. This will be your meat sauce for your chili, lasagne, and spaghetti sauce.<br />

I seasoned 4 C. of this sauce with 1 TB minced garlic, Italian seasoning, basil and oregeno and made two, 8x8 pans of lasagne. I used 1 lb. of mozzarella cheese, 2 C ricotta mixed with 2 C cottage cheese, 1 egg, some parsley and a pinch of nutmeg. I boiled 12 lasagne noodles and then cut each in half. I used 4 halves per layer. I layered noodles, meat sauce, ricotta sauce, and shredded mozzarella for 3 layers, ending with mozzarella on top. Oh, I sprinkled some Parmesan cheese on each ricotta layer, too. Here they are assembled and ready for the freezer. Cover with plastic wrap, then foil. I always put a reminder on my label to remove the plastic wrap because I'm afraid I'll end up cooking it onto the lasagne! Oh my gosh, I can't wait to bake these. Don't they look delish? I can hardly wait for lasagne night with a small salad and some crusty garlic bread, Mmmm.<br />

Then, I used 6 C. of the meat sauce to make chili. I added 2 C of the cooked vegetables along with 3 cans of beans (2 kidney, 1 black bean), 1 1/2 C frozen corn, 1/3 C chili powder, 1 1/2 TB cumin, a few dashes of hot sauce ( I use Tapatio), and salt. I simmered it for about 1 hour, then cooled and put in freezer containers.This will be great with cornbread, or to top off baked potatoes. This actually turned out better tasting than I thought - it is quite tasty. It is one of those dishes that is better the next day after all the flavors have blended. <br />

Next, I made meatloaf with 4 lbs. of ground beef, 2 C. of the cooked vegetables, 4 eggs, 1/2 C ketchup, 2 envelopes of dry onion soup mix, 1/4 c milk, and 1 1/3 C oatmeal. I used oatmeal because I didn't have any bread crumbs on hand. The mixture filled 3- 8x4 foil pans. I baked them for 1 hour at 350 degrees. You can certainly use your own family favorite meatloaf recipe. This is just what I did. Here they are before the oven and after.<br />

Meanwhile, I made salisbury steak with 4 lbs. of ground beef, 2 C oatmeal ( again, no bread crumbs on hand, and oatmeal is healthy), 1 box (2 oz.)dry onion soup mix, 2 egss, 1 TB garlic and 1/2 C water. Mix by hand and press into 2- 12x8 " foil pans. Put in oven with meatloaf and bake 25 min. Drain and let cool. Here they are cooling. Cut each into 8 pieces and layer with wax paper in a freezer bag. Label and freeze. <br />

While those are in the oven, make the gravy for the salibury steak by either making 24 oz. gravy from a dry mix, or with 2-12 oz cans of gravy. To the gravy add 2 C. water and 2 C of the cooked vegetables. Don't worry, for some reason adding the extra water doesn't thin it out too much. Bring to a simmer for 5 min. Put in 1 or 2 C freezer containers (uh, where are those?), label and freeze. I will serve this gravy with the salisbury steaks and some mashed potatoes. This is definitely comfort food!<br />

To the leftover meat sauce, I made it into spaghetti sauce by adding Italian seasoning, oregeno, basil and some minced garlic. Put this in freezer containers to suit your needs. Except I don't have any!<br />

I found out that I had almost 2 C of vegetables left over. Next time, I will use 1 1/2 pounds of each to make my cooked vegetables. Also, I forgot to get freezer containers in 1 C portions for the gravy, and I don't have enough containers for the chili and spaghetti sauce. So off to the store tomorrow to purchase those items. They will just have to chill in the fridge overnight in their pans. <br />

While I was cooking everything, yes, right while everything is in the oven, my youngest daughter calls from Alaska to tell me that my oldest daughter was just in an accident with a semi truck. Are you kidding me? Their car was making a left hand turn and the truck driver goes to pass them and T-bones their car. She was a passenger with her roommate and her roommates younger brother. they are all OK and are being checked out at the hospital. No broken bones I don't think, but a couple of concussions, severe bruising and I don't know what else. They have not made it back home from the hospital yet, so I don't know everything. Sheesh, I was ready to throw everything in the fridge and drive the hour to where she lives, but looks like they are all OK. Oh, the truck driver got a ticket. Ok, back to my post.<br />

Last week, I made enchiladas and made an extra pan for the freezer. Basically, anything I used to make in a 13x9" pan, I now make in 2- 8x8" pans and freeze one. Next week, I will make a chicken trio for the freezer. Now I won't have to cook until Christmas!<br />

Basically, the lemons are in a salt brine. The jar of lemons looks beautiful and the liquid has taken on a yellow hue, and I just loved how they looked on the counter. I had been keeping them in a cool room and I was now ready to try one. I opened up the jar, and to my surprise, the entire surface was covered in a layer of mold, and the topmost lemon was barely poking out of the brine. I was very disappointed that my experiment had not turned out and I was not keen on trying a lemon that had been sitting around in mold!<br />

I couldn't throw them out just yet. I let the jar sit on the kitchen counter for a week or so while I pondered the effects of the mold. First of all, the mold was just on the surface, and many a time I have cut mold off the edge of some cheese before eating it. I have never gotten sick. Mold shouldn't just make you sick. And back in the old days, do you think people were afraid of a little mold? Heck no! The lemons in the rest of the jar looked perfect. I decided to see if I could skim the mold off the surface and throw away that top lemon, and still manage to salvage the rest of the lemons. Well, that is just what I did and guess what! They are GREAT! I have used them 4 times now. I just take one out, cut it into quarters along the slits that I put the salt in, rinse briefly under cold water, and use. It is great on fish, and I even squeezed one in my iced tea, and no, it actually wasn't salty tasting in the least. I had no salt taste, even though you do get a bit of salt when you squeeze the juice and then taste it. I love these lemons. The book is Preserving Food Without Freezing or Canning, by Chelsea Green Publishing. I was intrigued, especially since it wasn't just about dehydrating. This includes preserving in the ground or root cellar, lactic fermentation (think sauerkraut), preserving in oil, salt, sugar, vinegar, and alcohol. This book was originally written in french and covers classic methods of preservation according to various contributors and their time honored customs that had been handed down through generations. <br />

Fed Ex and UPS always just drop off any packages that they deliver on our covered front porch and leave it at that. Now, you know, we got Ernie back in December and he is usually put up in his kennel while we are at work or run to town for errands. A couple of weeks back I needed to run into town for a much needed haircut. Ernie needs to be able to be trusted to stay on our property along with Cooper to man the place and generally, be a dog out in the country. But little steps. I wasn't going to just up and leave for the whole afternoon, after all, he is only 5 months old. So, I figured he could handle an hour and half unsupervised and could be trusted. After all, wouldn't Cooper scold him if he got out of line? Cooper is supposed to be showing Ernie the ropes. I got home with my new do, and pulled up in the driveway, and for the life of me, I couldn't figure out what all the garbage was strewn across the front yard. As I wandered over to investigate, I saw shreds of packaging paper, bubble wrap, and what was left of my brand new book! Complete with grass and dirt in between the pages. Yep. <br />

You can't really tell from the picture, but the first ten or so pages have been chewed at the corners, and I put some packaging tape over what used to be the rest of the cover. Apparently, Ernie figured that the package was a toy to shred to pieces and needed to be dealt with before I got home. I was not very happy! It's a good thing he's cute.<br />

One of the first methods of preserving that caught my eye was lemons in salt. I love lemons. I enjoy them in ice tea, for cooking, and fresh juice is hard to beat. But I don't usually buy lemons unless I have a specific purpose, and often am cooking something that uses fresh lemon juice, but since I don't have any on hand, I use the bottled juice. Now, what if I could have a real live lemon any time I wanted. That is very appealing to me. So I sterilized a half gallon jar, and got to work. You soak the lemons for several days changing the water. I used organic lemons, I like them better and they are smaller with a thinner rind. Then you boil water and let it cool. Slit the lemons length wise not going all the way through the ends, and add non-iodized salt into the slits. Cover with the cooled water, seal and wait a month. Rinse and use. I have about 3 weeks to go before I try one. The picture clarity isn't the best, but they do look pretty in the jar. I will let you know how they turn out. I don't see why you couldn't use this method with limes as well.<br />

I was dreading the process of pitting because I have 2 single pitters, and even with DH's help, it is a long and tedious process. I decided to run to town yesterday and see if I could find a more efficient tool for this task. Success! At Fred Meyer, I found this nifty pitter. It is important not to stem the cherries before you are ready to use them because they will rot. </span><span style="color: black;"><span style="color: black;">You just load up the hopper with washed and stemmed cherries.</span>You can see my washed cherries on the left, the hopper with cherries, and the bowl on the right that the pitted cherries pop into. Then, just push the plunger and out comes your pitted cherry. The pits are disposed of in a little container of the other side of the unit. This little gadget saved me so much time and back ache! It was well worth the $20 and as my DH says, never pass up a tool you can use. </span></div>

<span style="color: black;">I processed one bag yesterday and was able to put up 14- 1/2 pint jars of cherry jam and 9 pints of cherry sauce. If you have never made cherry jam, try it. It is absolutley delicious and you may have a new favorite. For the cherry sauce, which is great over ice cream, cheesecake, or pancakes, I was using a Danish Cherry Sauce recipe from my Ball Blue book, when I realized that the almond extract that the recipe called for, had all evaporated out of the tiny bottle. So, no almond extract in the sauce and it is still delicious. I thickened the sauce with Clear Jel. I just used a lesser amount the the recipe called for in cherry pie on the Clear Jel label, plus I added some lemon juice.I doubled the recipe so used 6 lbs. of cherries just for the sauce. </span></div>

The cherry sauce is on the left and the jam is on the right. I plan to share some of the cherries that are left with friends, and then can up some pints and put a bag or two in the freezer. All in all, summer harvest season is off to a good start in the orchards. As for our garden, we just got our transplants in the ground today. The potatoes have all come up, but it has been so darned windy, that we couldn't get anything in the ground until now. Hopefully, it is not too late in the season for our little transplants to get to growing. I ordered a simple cheese making kit and on Monday, I made Farmhouse Cheddar. It is supposed to be really easy and although all I had to go on was written materials, I think I did okay with the exception of reading the directions too many times, thus, numerous mistakes and oversights. The cheese curds seemed very forgiving and I really don't know what I was doing, but I was not too sure about when the curds were ready to be pressed. Well, I pressed on anyway and then let the cheese dry for 5 days. Today was waxing day. I went to Goodwill and bought a pot since the wax will forever be melded to it.<br />

I thought I was going to find the waxing very taxing and I was not looking forward to dipping the cheese. Well, I had fun and the following pictures and the results of waxing my cheese adventure, which is the round wheel. I figured while I was going to melt a whole pot of wax, I might as well make use of the wax and my time and I drug out two- 2 lb. bricks of Tillamook cheese, and a small mozzarella and a sharp cheddar. I cut the Tillamook into 1 lb. blocks so it would easily fit into the pot to be dipped. For those of you that don't know, Tillamook cheese is a famous and popular brand native to the west coast and is made in Tillamook, OR. Most of their cheeses are medium cheddar, but they also make mild and sharp cheddars, as well as a vintage white cheddar (excellent) and some other specialty cheeses. Tillamook cheese is VERY good and our go-to cheddar.<br />

Here are our finished products with labels attached with a thin coat of wax. I will age my cheddar for at least 2 months. The other cheeses I will see how they fare sitting around at room temperature. They are supposed to continue aging, and as long as there are no holes in the wax, should be just fine to eat. <br />

I have been passive just because I have been so busy with life, and I have not taken the time to post comments. I know you all understand how it goes. That said, I have been wanting to try a pickled asparagus recipe, because we like it and I just don't have the drive to eat plain asparagus during its season more than 2-3 times. I love it on salads, to eat out of the jar, to embellish with come chopped hard boiled egg with Dijon mayonnaise, or what have you. I have never canned it myself. I have found 2 recipes. One in <a href="http://www.amazon.com/The-Big-Book-Preserving-Harvest/dp/1580174582/ref=sr_1_1?ie=UTF8&qid=1368675662&sr=8-1&keywords=preserving+the+harvest">Preserving the Harvest</a> by Carol Costenbader, and another from a friend.<br />

Here is Carol Costenbaders:<br />
<b><br /></b>
<b>Pickled Asparagus</b><br />
<br />
3 C distilled vinegar<br />
3 C water<br />
1/4 C sugar<br />
2 tsp salt<br />
3 # (8 C) asparagus spears, washed and trimmed<br />
4 cloves garlic<br />
2 tsp pickling spice<br />
12 whole black peppercorns<br />
<br />
Combine vinegar, water, sugar, and salt in a 2 qt. saucepan and heat to a boil. Pack the asparagus in two 1-quart jars, leaving 1/2 " head space. Divide the garlic, pickling spice and peppercorns between the two jars. Pour the hot vinegar mixture over the asparagus, leaving 1/2 in. head space. Cap and seal. Process for 20 min. in a boiling water bather canner and adjust for altitude if necessary. <br />
<br />
Here is another recipe that is a homestead recipe, try it at your own risk, as I have not tried it, although, I hear it garners $10 a quart jar from the people that spend the time to make it. I think it sounds absolutely delicious.<br />
<br />
<b>Cajun Pickled Asparagus</b><br />
<br />
1/4 C pickling salt<br />
2 1/2 qts cider vinegar<br />
2 1/2 qts water<br />
3/4 C brown sugar<br />
Bring this brine to a boil-<br />
in each Qt jar put:<br />
1 tsp crushed red pepper<br />
1 tsp cumin seed<br />
1 clove garlic<br />
<br />
Pack jars with washed, trimmed asparagus, leaving 1/2 in. head space, pour brine over top and process in boiling water bath canner for 15 min., adjust altitude if necessary.<br />
<br /> Enjoy. I plan to make this recipe over Memorial Day weekend and will let you know how it goes.<br />

Yep, it's that time to start planning your garden. I want to try some new veggies and some new management practices. If anyone knows of any way of "weeding" that doesn't require back strain and pulling, please share with me. I have been perusing the catalog and am getting excited to get my hands dirty. My biggest problem is that once school starts, the garden goes by the wayside in September. So, I need to keep up my enthusiasm for at least 9 months. Mind you, I don't care for squash in particular. I've always found that squash 'taste" to be too much, with the exception of pumpkin. I don't care for yams, butternut squash, or sweet potatoes. I grew butternut squash last year in the hopes of "liking" it, but did not. Even with the addition of dubious amounts of brown sugar, butter, pineapple and marshmallows. It fell short for me.l <br />

So here I bought a "start" at the local Bi-Mart store that actually had two plants in the little pot. So I planted them. And off did they go! Holy, Moly! I had spaghetti squash galore, coming out at me from all sides. Well, I had never even tried spaghetti squash, yet even enjoyed any squash except pumpkin. And I had never grown a pumpkin. So, I really, really hoped we liked it. Because... we had so many. So, when to harvest. Well... I don't know. so I harvested at all stages because I didn't know what to look for. Don't harvest when they are still green and stripey. Too soon. I have green and stripey, orange and a little stripey, and beige (perfect!). <br />

Okay, so my recipe critique of Spaghetti Squash Gratin. First, I learned spaghetti squash does not have that "squash, yam... taste." So I liked it. But... it is kind of bland, so the bacon helped. I would recommend using a stronger cheese like sharp cheddar in this dish. Mozzarella got very lost. Also, I will add next time, butter and some brown sugar. This dish needs dome perking up! It is good... but it needs more than the original recipe. I will add butter next time, too. Overall, an okay dish, but trust me, it needs: butter, sharp cheddar, and brown sugar. I found this recipe for Pizza Dip over at <a href="http://www.closetcooking.com/2011/03/pizza-dip.html">Closet Cooking. </a>Give it a try. It is ooey, gooey goodness. Tweak it and add whatever toppings you like. I like to use toasted french bread slices to scoop up this delicious dip.<br />

<b>Pizza Dip</b><br />

<li class="ingredient">4 ounces cream cheese, room temperature</li>
<li class="ingredient">1/4 cup sour cream</li>

<li class="ingredient">1/2 cup mozzarella, grated</li>
<li class="ingredient">1/4 cup parmigiano reggiano (parmesan), grated</li>

<li class="ingredient">1/2 cup mozzarella, shredded/grated</li>
<li class="ingredient">1/4 cup parmigiano reggiano (parmesan), grated</li>

<li class="ingredient">2 tablespoons green pepper, sliced (I used mushrooms, instead)</li>

<li class="instruction">Mix the cream cheese, sour cream mayonnaise, mozzarella and parmigiano reggiano and spread it across the bottom of a pie plate.</li>
<li class="instruction">Spread the pizza sauce on top and sprinkle on the cheese, pepperoni, green pepper and olives.</li>
<li class="instruction">Bake in a preheated 350F oven until the sides
are bubbling and the cheese cheese has melted and turned golden brown on
top, about 20 minutes.</li>

This recipe for peanut butter cups is not new, but I make it every year for the holidays and thought you may like to try it.<br />

<b>Peanut Butter Cups</b><br />
<br />
1/3 C creamy peanut butter<br />
1/4 C powdered sugar<br />
1 tsp vanilla<br />
Mix well and chill. Roll into 24 balls, about 1/2 tsp each, and place in paper cup lined mini muffin tin.<br />
<br />
1/2 C creamy peanut butter<br />
8 oz milk chocolate chips<br />
Melt in microwave 1-2 min. and stir well. Cover peanut butter balls with chocolate and chill in fridge.<br />

<span style="font-size: medium;"><b>Spaghetti Squash Gratin with Walnuts and Bacon</b></span><br />

Spaghetti squash, about 3-4 lbs<br />
4 slices of bacon, cooked and crumbled<br />
1/3 cup walnuts, chopped and toasted<br />
1/3 cup panko crumbs<br />
1/2 cup cheese (dry mozzarella, or whatever you have on hand)<br />
1 tsp chili powder<br />
olive oil<br />
salt and pepper<br />

Preheat oven to 350. Carefully slice the squash in half (heating it in
the microwave for 2 minutes or so makes this process a lot easier!) and
remove seeds. Rub flesh with olive oil and sprinkle with chili powder.
Roast for about 40 minutes, or until you can easily comb a fork through
the flesh.<br />
<br />
Scrape out all of the "spaghetti" flesh from each half and sprinkle with
salt and pepper. Place half of squash in a greased 8x8 baking dish.
Top with bacon crumbles, toasted nuts, and HALF of the shredded cheese.
Top with remaining squash, followed by remaining cheese and panko
crumbs. <br />
<br />
Increase oven temperature to 375 and bake for about 10 minutes, or until the top is brown and the cheese has melted.<br />

Store leftovers in refrigerator. Freezes well.<br /><br />To reheat single
servings: Put 1-cup cooked oatmeal in microwave proof bowl. Add 1/3 cup
fat-free milk. Microwave on high for 1 minute; stir. Continue cooking

Well, it turns out we didn't puppysit this weekend after all. DD19 is
planning her trip tentatively for next weekend. But she did bring her
blue heeler pup out on Wednesday for a play date with Cooper.
Unfortunately for Wesson, he began to yelp while in the front yard under
Cooper's supervision and was visibly hurt and limping. After a couple
of hours of TLC and no improvement, he had a visit to the vet for a
diagnosis of a slight fracture in the hip. Friday when Wesson visited,
he was still limping, but was entrusted to our care so DD19 and her BF22
could go ice skating. Here is Wes, you can see he is favoring his hind leg. Ice skating was cancelled due to a blizzard they ran into on the way before they even got to the pass. Our very first puppy sitting with our grandpup was unexpectedly cancelled! Bahahaaaa!!<br />

Here we are making apple cider with some friends. I was able to put up 14 quarts with a gallon and a half to drink and share with others. Plus, I have two boxes of apples in the garage. Didn't I lament last fall on processing all those apples. Well, here I go again! This weekend, I dried two batches and canned up 3 quarts. I know, only 3 quarts, but it was today after I had already made salsa and was kinda beat. Plus, my back was complaining.<br />

We have had the worst luck with our leaky skylights in the kitchen and bathroom. 2 weeks ago we had a doozy of a rainstorm so DH ordered tin and went to work Saturday pulling off the old tin and getting the new stuff on. Did I mention that when he started it was lightly snowing and water was coming off the roof? Yeah. Well, lucky for us it stopped so he could get his work done. <br />

We woke up to 5-6 inches of new snow this morning. It's not supposed to last though. Yesterday DH as busy changing tires on our daughter's cars. Just in time! I am without winter tires but hope I will be okay. I have a Subaru with new tires and a new set of tires and rims would run about $1,000 and we are not wanting to spend any money now if we don't have to. DH has my old Subaru and he has will be putting winter tires on it soon. I am keeping my fingers crossed that the roads won't be too bad this winter. <br />

Here's my Veteran's Day work. I had a whole box of green tomatoes in the greenhouse and I am tired of waiting for them to ripen. What to do? Well, make Green Tomato Salsa, of course! Except, I have never made green tomato salsa before and didn't have a good recipe. I like salsa verde which is made with tomatillos, so I figured, how much different can a green tomato be? I found a <a href="http://www.food.com/recipe/green-un-ripe-tomato-salsa-for-canning-393491">Green Tomato Salsa Recipe</a> that looked good. So, here it is. It made 8 pints with enough leftover to enjoy today. The only changes I made were that I used 2 large red peppers , 2 large onions, and substituted lemon juice for the vinegar. I have found that home canned salsa with vinegar has an unpleasant taste that our family does not like, and lemon juice is an acceptable acid substitute for vinegar. The salsa is very good with just enough heat and a slight tartness. Be sure to use the sugar to counter the tartness. The picture looks pasty and doesn't show the beautiful, bright shades of green. It is much prettier in real life. <br />

I got ambitious. First, I had peeled apples for dehydrating which just takes minutes. Then I made the green tomato salsa. I had purposely left the bowl of water with the anti-browning treatment in it to use in case I was energetic and wanted to can some apples later. Yeoww!! I didn't realize how tired I was or how my back was aching, so after enough apples for 3 quarts I called it quits, and stopped there. Here are the apples<br />

Yes, that is a fence charger you see on the porch. Cooper loves to dig but DH took it down, and that wee bit of corner you can see in the lower right of the picture is routinely dug up, much to our dismay. When the charger is up and running, no digging, when the charger is unplugged and down, digging! We are open to suggestions that don't entail brute punishment. I would use his shock collar, but of course I would have to catch him in the act to use it and he's too smart for that!<br />

She is going out of town and wants to know if we can watch her 3 1/2 month old puppy over the weekend. A Blue Heeler. Named Wesson (Smith's cousin). With lots of energy. That never stops moving. That mauls our Cooper to death and when he's down and wore out, jumps and climbs all over him. Cooper is soooo patient with him. He let's him bite and pull at his fur and jump all over him. He runs around him and jumps some more. I get tired just watching for 2 minutes. Cooper is so wore out after an hour visit, he sleeps for hours afterward.<br />

Our chickens have discovered the joy of digging up and eating potatoes. We are going to dig up the potatoes and put them in the shop to cure. They also love romaine lettuce and spinach less so. So far, they have left alone the peppers, tomatoes (which are still VERY green) the zucchini and cucumbers. Have you ever tried lemon cucumbers? They are delicious. Last weekend, we picked enough green beans to can 16 pints and had some leftover for the freezer. They are still coming on so will pick again this weekend.<br />

We have not been able to spend much time at all outdoors do to poor air quality from the fires here in the PNW. Some days it smells like a campfire all day long and visibility is so poor it is about 1/2-3/4 mile. It would be such a lovely fall if the air were better. Winter preparations need to attended to in October, so I am hoping we can get to everything before the snow flies. <br />

Meanwhile, Safeway had an excellent buy on beef round tip roast for $2.49/lb. It is the kind of roast that does so well in the crock pot all day, then shreds to perfection without all those grisly, slimy parts that are yucky to peel off. It's all meat and so tender. The first roast I put garlic slivers in and rubbed with salt, pepper and some spice rub, and it had the most wonderful juices leftover to make a tasty gravy to serve with mashed potatoes. Saturday we are having company, so I am thawing one and am going to crock pot it all day with mexican seasonings so I can shred it for tacos and burritos for a mexi bar so that people can make the burritos as they like. Love to have leftovers for easy week night meals, too. That BO hen I think is wanting to brood again. I put a Rhode Is. Red in the nursery yesterday because the rooster is sooo hard on her that her back end is not only bare but deep, deep red from irritation and swollen, so I put her in the nursery last night. Well, today, I went out to put the gals up and RI Red was not in the pen, but BO was! Yesterday I took out 3 eggs from the nursery that she laid and when I cracked them this morning for scrambled eggs, they looked like they were on the first day or two of a new life beginning. We'll see what happens.<br />

Anyways, I apologize for not blogging. I don't know why really. I need a break, or I am feeling overwhelmed with the news. Maybe I am just in a slump. Suppose that every day, ten men go out for a beer and the bill for all ten comes to $100.<br />
If they paid their bill the way we pay our taxes, it would go something like this:<br />
The first four men (the poorest) would pay nothing.<br />
The fifth would pay $1.00<br />
The sixth would pay $3.00<br />
The seventh would pay $7.00<br />
The eighth would pay $12.00<br />
The ninth would pay $18.00<br />
The tenth man (the richest) would pay $59.00<br />
So that’s what they decided to do. The men drank in the bar every day
and seemed quite happy with arraignment, until one day, the owner threw
them a curve.<br />
“Since you are all such good customers, he said, I’m going to reduce the cost of your daily beer by $20.00.<br />
“Drinks for the ten men now cost just $80.00<br />
The group still wanted to pay their bill the way we pay our taxes so
the first four men were unaffected. They would still drink for free. But
what about the other six men – the paying customers? How could they
divide the $ 20 windfall so that everyone would get there “fair share?”
They realized that $ 20.00 divided by six is $3.33. But if they
subtracted that from everybody’s share, then the fifth man and the sixth
man would each end up being paid to drink his beer. So, the bar owner
suggested that it would be fair to reduce each man’s bill by roughly the
same amount, and he proceeded to work out the amounts each should pay!<br />
And so:<br />
The fifth man like the first four, now paid nothing ( 100% savings).<br />
The sixth now paid $2 instead of $3 (33% savings).<br />
The seventh now pay $5 instead of $7 (28% savings).<br />
The eighth now paid $9 instead of 12 (25% savings).<br />
The ninth now paid 14 instead of 18 (22% savings).<br />
The tenth now paid $49 instead of $59 (16% savings).<br />
Each of the six was better off than before! And the first four
continued to drink for free. But once outside the restaurant, the men
began to compare their savings.<br />
“I only got a dollar out of the $20“ declared the sixth man. He pointed to the tenth man, “but he got $10!”<br />
“Yeah, that’s right, shouted the seventh man. “why should he get $10 back when I got only two? The wealthy get all the breaks!”<br />
“Wait a minute,” yelled the first four men in union. “ We didn’t I get anything at all. The system exploits the poor!”<br />
The nine men surrounded the tenth and beat him up.<br />
The next night the tenth man didn’t show up for drinks, so the nine
sat down and had beers without him. But when it came time to pay the
bill, they discovered something important. They didn’t have enough money
between all of them for even half of the bill!<br />
And that, boys and girls, journalist and college professors, is how
our tax system works. The people who pay the highest taxes get the most
benefit from a tax reduction. Tax them too much, attack them for being
wealthy, and they just may not show up anymore. In fact, they might
start drinking overseas where the atmosphere is somewhat friendlier.<br />
